Buffalo Burger – Büffel-Burger

Barbecue season has begun. Although I have to admit it never ended for me. I was grilling even in the snow… :-P But I think the the barbecue season has officially begun now that the weather is spring or summer like. In North America, burgers are one of the favourite foods to grill. To make things a little more interesting, I tried a buffalo burger this time around.

Buffalo Burger

Ingredients

  • 1 lb / 450 g ground bison (buffalo)
  • 1 – 1 ½ tbsp chopped fresh sage
  • salt, pepper
  • ¼ onion, finely chopped
  • olive oil

To assemble the burger

  • buns (I used whole grain sandwich flats / thins)
  • lettuce
  • tomato slices
  • cheese slices, e.g. Swiss cheese
  • sauces (I used mayonnaise and thousand island dressing)
  • fresh onion rings

Directions

Sauté the onion in a little bit of olive oil until translucent. Let them cool.

Then combine the onion with the meat and the sage but don’t overwork the meat. Season with salt and pepper. Shape into patties with a little indentation in the middle. This prevents them to turn into egg shapes. Grill them for about 6-7 minutes from each side. At the end place a slice of cheese on each pattie and let it melt.

Place the buns with the inside down on the grill and toast them if you like. Then assemble the burgers.

Büffel-Burger

Zutaten

  • 450 g Gehacktes aus Bison/Büffelfleisch
  • 1 – 1 ½ EL frischer Salbei, klein geschnitten
  • Salz, Pfeffer
  • ¼ Zwiebel, klein geschnitten
  • Olivenöl
  • Buns / Burgerbrötchen (Ich habe Vollkorn-Sandwich-Flats/Thins verwendet)
  • Salatblätter
  • Tomatenscheiben
  • Käsescheiben, z.B. Schweizer Käse
  • Saucen (Ich habe Mayonnaise und “Thousand Island Dressing” verwendet)
  • frische Zwiebelringe

Zubereitung

Die Zwiebelstückchen in ein wenig Olivenöl braten bis sie glasig werden. Abkühlen lassen. Dann die Zwiebelstückchen mit dem Fleisch und Salbei vermengen, aber sollte das Fleisch nicht zu sehr verknetet/bearbeitet werden. Mit Salz und Pfeffer würzen. Das Fleisch zu Burgern formen und dabei in der Mitte leicht eindrücken. So kann verhindert werden, daß die Burger beim Grillen zu sehr eine Eiform annehmen. Das Fleisch dann für 6 bis 7 Minuten von jeder Seite grillen. Am Ende eine Scheibe Käse auf jeden Burger legen und schmelzen lassen.

Die Buns / Burgerbrötchen mit der Innenseite kurz auf den Grill legen und toasten.

Die Burger dann je nach Belieben zusammensetzen.

    We eat bison once in a while at restaurants but never bought it to cook at home. No particular reason but this burger looks really scrumptious – I feel like we eat at a fancy restaurant! :)

    @ Nami: Thank you! :-) I have to say that this was my first time trying bison. I love it. It does seem fancy though :-)
