Broccoli Bites – Brokkoli-Happen

These Broccoli Bites are essentially mini versions of a broccoli casserole. These bites can either be served as a side or main dish. This recipe falls into the incredibly versatile category. I did not any additional ingredients but the possibilities seem endless as to what ingredients could be add, maybe different types of cheese, seeds, nuts, different grains, spices etc. This dish is not only very versatile and tasty, it is also easy to prepare. A perfect meal when you don’t want to spend much time in the kitchen or simply don’t feel like cooking.

Broccoli Bites


  • 2 medium-sized broccoli heads
  • 3-4 eggs
  • grated cheese
  • salt, pepper
  • nutmeg
  • quick oats (or breadcrumbs)
  • additional optional ingredients: chopped almonds, fried bacon pieces, pumpkin seeds, sunflower seeds etc


Preheat the oven to 190°C / 375°F. Lightly grease a muffin tin.

Place the broccoli florets in a food processor and pulse several times to chop the broccoli into quite small pieces. Place the broccoli in a bowl. Add the eggs and grated cheese and combine. Season with salt, pepper, and nutmeg. Then add enough quick oats (or breadcrumbs) to make the broccoli mix less moist. Additional ingredients can be added to taste.

Fill the muffin tin with the broccoli mix. Bake for 25 minutes.

  • 2 mittelgroβe Brokkoliköpfe
  • 3-4 Eier
  • geriebener Käse
  • Salz, Pfeffer
  • geriebene Muskatnuβ
  • zarte Haferflocken (oder Semmelmehl)
  • nach Belieben zusätzliche Zutaten: gehackte Mandeln, gebratener Speck, Kürbiskerne, Sonnenblumenkerne etc


Den Backofen auf 190°C / 375°F vorheizen. Ein Muffinbackform leicht einfetten.

Den Brokkoli in einer Küchenmaschine klein häckseln und dann in eine Schüssel geben. Die Eier und den Käse hinzufügen und alles vermengen. Mit Salz, Pfeffer und Muskat würzen. Dann die zarten Haferflocken (bzw. Semmelmehl) hinzufügen. Auf Wunsch können weitere Zutaten wie zum Beispiel gehackte Mandeln hinzugefügt werden.

Den Broccolimix in die Muffinförmchen füllen und circa 25 Minuten backen.

    We love broccoli!!! These mini casserole idea is wonderful especially I’m thinking healthy kids’ lunch menu in my mind all the time! They look pretty and delicious!

    I love the idea of a savory muffin or bread! These look like they’re so full of flavor – I want to slather them in butter and have them alongside every meal! ;)
