Exotic Chicken Sandwich with Banana Curry – Exotisches Hühnchen-Sandwich mit Bananencurry

Posted on | February 28, 2013 | 4 Comments

This sandwich is absolutely incredibly delicious :-) … The secret ingredient that makes this so amazing is the banana curry. This combination of mashed bananas with curry powder might sound strange but it makes this sandwich incredibly tasty. The cabbage salad adds a light and fresh taste to the sandwich. And some crispy texture.

The chicken, cabbage, and the banana curry can be prepared in advance. When you have guests just assemble the sandwiches then without much fuss in the kitchen.

Exotic Chicken Sandwich with Banana Curry

  • 500 g / 17 1/2 oz cooked chicken
  • 1/2 tsp chili flakes
  • salt
  • 2 tbsp olive oil
  • 1/2 bundle cilantro

Banana Curry

  • 2 bananas, not too ripe
  • up to 1 1/2 tsp curry powder
  • sugar

Cabbage Salad

  • 200 g / 7 oz cabbage, finely shredded
  • 1 tbsp apple cider vinegar, preferably raw, unfiltered apple cider vinegar
  • sugar
  • salt
  • 2-3 tbsp almond slices
  • 2-3 tbsp dried cranberries

also needed

  • 1/2 red onion, thinly sliced
  • bread

Pull apart the chicken and place it in a bowl. Add the chili flakes, salt, olive oil, as well as the chopped cilantro. Combine the ingredients. Adjust seasoning to taste.

In a new bowl, mash the peeled bananas with a fork and add the lime juice, curry powder, and a little sugar. Combine and adjust seasoning to taste.

In another bowl, combine the cabbage with the apple cider vinegar and season with sugar and salt. Add the almond slices and dried cranberries.

Smear some of the banana curry on the bread. Add some cabbage salad, chicken, and onion rings. Smear some banana-curry paste onto the top piece of bread. Place it on top of the onion rings. Serve immediately.
