Lemon-Blueberry Bars

I have never had Lemon Bars before but they always look so tasty. Lemon Bars have been on my baking list for a long time. When I saw this recipe with blueberries, well, that was it. It’s a super easy and absolutely delicious recipe. I really love the addition of blueberries. What a tasty treat. 

These Lemon Bars are suppose to be very similar to Key Lime Pie with the difference that these are in bar shape and with lemon juice instead of the lime. Honestly, I wouldn’t know. Not only have I never tried Lemon Bars before but I also have not tried Key Lime Pie yet… Well, I guess this recipe is just perfect for me then because I get Lemon Bars, Key Lime (well, Lemon) Pie, and blueberries in one recipe… :-)

Ingredients

Crust

  • 1 1/2 cups graham cracker crumbs
  • 1 tbsp sugar
  • 3 tsp fresh lemon zest
  • 6 tbsp unsalted butter, melted

Filling

  • 2 egg yolks
  • 14 oz / 392 g can sweetened condensed milk
  • 1/2 cup fresh lemon juice
  • 1 tsp fresh lemon zest
  • 1 1/2 cups fresh blueberries

Directions

Preheat the oven to 350°F / 175°C. Combine the graham cracker crumbs with the sugar and lemon zest. Then add the melted butter and mix it in with a fork until it becomes moist. Place the crumb mixture into a lightly greased 8 x 8in baking dish or a similar dish. I used a 9in pie pan. Press the crumbs firmly into the bottom of the dish and if desired slightly up the side. Bake the crust for 10 minutes. Let it cool.

In a bowl, combine the egg yolks with the sweetened condensed milk. Stir in the lemon juice and the lemon zest and mix until it it well incorporated. Carefully, stir in 1 cup of blueberries. Pour the filling onto the crust. Top with the remaining 1/2 cup of blueberries.

Bake for 15 minutes or until set. Then let it cool at room temperature before allowing it to completely chill in the refrigerator.

Blaubeer-Zitronen-Schnitten

Zutaten

Boden

  • 190 g zerstoβene Graham Crackers (Krümel); Graham Crackers sind eine Art Vollkornkeks.
  • 1 EL Zucker
  • 3 EL frisch geriebene Bio-Zitronenschale
  • 85 g / 6 EL ungesalzene Butter, geschmolzen

Füllung

  • 2 Eigelb
  • 392 g / 14 oz Dose gesüβte Kondensmilch
  • 120 ml frisch gepreβten Zitronensaft
  • 1 TL frisch geriebene Bio-Zitronenschale
  • 210 g frische Blaubeeren

Zubereitung

Den Ofen auf 350°F/175°C vorheizen.

Die Kekskrümel mit dem Zucker und der Zitronenschale vermengen. Die geschmolzene Butter hinzufügen und mit einer Gabel gut vermengen. Die Krümelmasse in eine leicht eingefettete 8×8 inch/20 cm Backform oder eine Backform von ähnlicher Grösse geben. Ich habe eine 9 inch/23 cm Pie-Backform verwendet. Die Kekskrümel andrücken und einen Boden formen. Wenn man mag, kann man auch Ränder formen. Den Boden für ungefähr 10 Minuten backen. Abkühlen lassen.

In einer Schüssel, die Eigelb mit der Kondensmilch vermischen. Den Zitronensaft und die geriebene Zitronenschale unterrühren. Vorsichtig eine Tasse Blaubeeren unterheben. Die Füllung auf den Keksboden giessen und dann die restlichen Blaubeeren auf der Füllung verteilen.

Die Blaubeer-Zitronen-Schnitten für ungefähr 15 Minuten backen. Erst bei Raumtemperatur ein wenig abkühlen lassen und dann in den Kühlschrank stellen bis sie komplett abgekühlt sind.

    Wait wait wait. Never had key lime pie? Go make one now! My favorite pie and so easy. :) These look so so so good. Now I’m kind of wishing it weren’t already fall baking time. Blueberries and lemons are pretty much the cheeriest combo ever.

    @ Erin: hahaha… Actually, I would if I had the ingredients. Next time I go shopping I’ll make sure to get everything. Your favourite pie? I see you haven’t tried the banoffee pie yet… ;-P Or the key lime pie is just that good… I guess I really do need to make it soon. I know I love the blueberry and lemon combo and I am not quite in fall baking mood yet. It’s still really hot here.
