Garlic Lemon Chicken Kabobs

This chicken turns out really tender, juicy, and flavourful; absolutely delicious… I love the combination of lemon, garlic, and cilantro with chicken. With grilling season starting for us, I know I will be making this recipe a lot this year. It doesn’t require a lot of work but the result is amazing…
Ingredients
- 2 chicken breasts, cut into bite-sized pieces
- 3 tbsp olive oil
- 4 tbsp lemon juice
- zest of one organic lemon
- 4 garlic cloves, grated
- 2 tbsp chopped cilantro or parsley
- salt, pepper
Directions
In a bowl, combine the olive oil, lemon juice, lemon zest, garlic, and cilantro or parsley. Season with salt and pepper.
Add the chicken pieces to the bowl. Toss the chicken to coat it with the marinade. Cover the bowl and place it in the refrigerator. Let the chicken marinade for several hours (up to 8 hours).
Thread the chicken pieces onto skewers. Presoak the skewers in water for about 20 minutes if wooden ones are used.
Then grill the kabobs on the barbeque, turning once or twice until the meat is cooked.

Zitronen-Knoblauch-Huhn-Schaschlik
Zutaten
- 2 Stück Hühnerbrust, in mundgerechte Stücke geschnitten
- 3 EL Olivenöl
- 4 EL Zitronensaft
- geriebene Schale einer Bio-Zitrone
- 4 Knoblauchzehen, gerieben
- 2 EL gehacktes Korianderkraut/Cilantro oder Petersilie
- Salz, Pfeffer
Zubereitung
In einer Schüssel, das Olivenöl mit dem Zitronensaft, Zitronenschale, Korianderkraut oder Petersilie vermengen. Mit Salz und Pfeffer würzen.
Das klein geschnittene Huhn hinzufügen und mit der Marinade vermengen. Die Schüssel abdecken und in den Kühlschrank stellen. Das Huhn für einige Stunden marinieren lassen (bis zu 8 Stunden).
Das Fleisch dann auf Schaschlikspieβe spieβen. Hölzerne Schaschlikspieβe vorher 20 Minuten lang in Wasser einweichen lassen. Das Huhn grillen bis es gar ist, gelegentlich wenden.

This looks really easy to make and delicious. My chicken is defrosted and I’ll ask my husband to grill after he comes home from work. Perfect dinner plan..especially today is nice and warm day outside! Thanks for sharing the recipe!

You know what? I’m the pickiest eater ever and I rarely find real food recipes on blogs that I want to make. And first there was that lemony pork loin stuff (still on my list!) and now this. Yay!
