Southern Pork Roast with Pineapple and Cranberries

Posted on | February 11, 2012 | 2 Comments

This yields quite the flavourful Pork Roast.  The sweet sauce mixed with spices such as nutmeg and cloves makes this dish smell and taste delicious.  The sweet sauce complements the meat perfectly.

Serve with potatoes or pasta and a salad or vegetable side dish.  It makes for a fancy meal but involves only barely any work. Perfect!

Ingredients

  • 2 lb pork roast
  • salt, pepper
  • 1 can pineapple in pineapple juice, drain the pineapple and preserve 1 cup of pineapple juice
  • 1 1/2 cup cranberries
  • 3 tbsp honey
  • 1/2 tsp ground cloves
  • 1/2 tsp nutmeg

Directions

Rub the pork roast with salt and pepper and place it in the slow cooker/crock pot.

Add the following ingredients to a sauce pan: the pineapple juice, the cranberries, and the honey.  Bring everything to a boil and cook until all the cranberries pop.  Take it off the heat and set aside.

Cut the pineapple in small pieces and add it together with the cloves and nutmeg to the cranberries.

Pour the sauce over the meat and cook in the slow cooker for several hours until done.

Guten Appetit!!!
