German Baked Red Beets

I have always been a fan of red beets.  This recipe yields a delicious and healthy red beet side dish.  The slices will come out slightly crunchy.  If you prefer them a little softer just leave them in the oven long enough until they’re as soft as you want them to be.  The flavour of these beets combines tangy lemon with thyme and honey.  It’s a great side dish or side salad but you can also use these beets as ingredients for other dishes like pasta salads.  This will add some extra colour and flavour.

Ingredients

  • 1 kg red beets
  • 3 tbsp lemon juice
  • 1 tbsp lemon zest
  • 2 tbsp olive oil
  • 1 tbsp honey
  • fresh or dried thyme
  • salt, pepper

Directions

Peel the red beets and cut them into 1/2 cm (about 1/4 inch) thick slices. (Warning: This will stain your hands pretty good.  So either you wear gloves or be prepared to scrub your hands afterwards like me.) 

Preheat the oven to 375°F / 190°C.

Place two large pieces of parchment paper on top of each other on a baking sheet.  Place the beet slices on the parchment paper.

In a small bowl, combine the lemon juice, lemon zest, olive oil, and the honey.  Mix until everything is combined.  Then add the thyme.  It is up to you how much thyme you want to use.  I usually use around 2 tablespoons.  Then add some salt and pepper.

Pour the sauce over the red beets and cover it with the parchment paper by twisting the ends together like a bonbon.  Place the baking sheet in the oven and bake the red beets for about 45 minutes or longer if you want them softer. 

Serve warm or cold.

Gebackene Rote Bete

Zutaten

  • 1 kg Rote Bete
  • 3 EL Zitronensaft
  • 1 EL geriebene Zitronenschale
  • 2 EL Olivenöl
  • 1 EL Honig
  • frischer oder getrockneter Thymian
  • Salz, Pfeffer

Zubereitung

Die Rote Bete schälen und anschlieβend in ca. 1/2 cm dicke Scheiben schneiden.  Hier ist Vorsicht geboten, denn das verfärbt die Hände ordentlich.  Also entweder mit Handschuhen arbeiten oder aber wie ich die Hände anschlieβend eine Weile schrubben.  :-)

Den Backofen auf  190°C / 375°F vorheizen.

Zwei groβe Bögen Backpapier übereinander auf ein Backblech legen. Die Rote Bete auf das Backpapier geben.

In einer kleinen Schüssel den Zitronensaft mit der geriebenen Zitronenschale, Olivenöl und dem Honig vermengen.   Den Thymian hinzufügen.  Wieviel Thymian man hizufügt, ist Geschmackssache. Ich nehme jedes Mal ca. 2 Esslöffel, aber wie gesagt, dass ist Geschmackssache.  Dann Salz und Pfeffer hinzufügen.

Die Soβe über die Rote Bete gieβen und in dem Backpapier wie einen Bonbon einwickeln  indem man die Backpapierenden zusammendreht.

Das Backblech in den Backofen schieben und die Rote Bete für ca. 45 Minuten backen oder aber länger wenn die Rote Bete weicher sein soll.

Warm oder kalt servieren.
