Apple Meringue Pudding

Apple Meringue Pudding, what an intriguing and different dessert; I had to give this a try… I have never eaten apple pudding before.  The meringue on top adds some beauty to this dish along with great flavour.  My husband is in love with this dessert.



  • 2 cups applesauce, unsweetened
  • 3 egg yolks, slightly beaten & strained
  • 2-3 tbsp honey
  • 1 tbsp butter
  • dash cinnamon
  • dash nutmeg


  • 3 egg whites
  • 3 tbsp sugar


Preheat the oven to 350°F.

Combine the applesauce, egg yolks, honey, butter, and the cinnamon and nutmeg in a medium sauce pan.  Warm the mixture over low heat while constantly stirring.  Heat until the butter and honey melt.

Pour the pudding mixture into 4 to 6 ramekins.  Place them in the oven and bake for up to 25 minutes or until the pudding begins to set.  Remove the ramekins from the oven and let them cool a little.  Don’t turn off the oven just yet.

In the meantime, beat the egg whites with an electric mixer until they start to become stiff.  Gradually add the sugar and continue to beat until stiff and shiny peaks form.   Spoon or pipe the mixture onto the pudding and bake in the oven until the top starts to brown.  Remove from the oven.

Cool in the refrigerator for about an hour.  Sprinkle a little cinnamon over the meringue before serving.
