Tomato Salad

This is a beautiful and delicious salad.  It is quickly prepared and can be served as an appetizer, side salad or as a snack. 

If you have access to garden tomatoes or tomatoes from a nearby farmers’ market, choose those for your salad.  Your taste buds will thank you.

Ingredients

  • tomatoes  
  • onion, finely chopped
  • garlic, grated
  • olive oil
  • balsamico vinegar or apple cider vinegar (the raw, unfiltered apple cider vinegar is very healthy)
  • honey
  • salt, pepper
  • fresh (chopped) or dried herbs of choice (such as basil, chives, parsley etc)

Directions

Chop the tomatoes into small chunks.  Place them in a bowl.

In a different bowl, mix the dressing.  Add some chopped onion and the garlic.  Then add a little olive oil, vinegar, and honey.  Season with salt and pepper. Add some chopped herbs. 

Add the dressing to the tomatoes. Mix.  Taste and adjust seasoning.

Let the salad marinade for at least 10 minutes, preferably longer.

    Farmer’s tomatoes are the best!! I will make it but adding cucumber as well….those two veggies combined are really delicious.
