Watermelon with Cotija and Mint

I have never tried this Mexican Cotija cheese before, and I  have to say I like it very much.  My husband and I love the watermelon mint combination.  We often add watermelon and mint to our salads.  It’s delicious but adding some salty cheese, balsamic vinegar and honey to this combination… this had to be good.  


  • several watermelon squares
  • olive oil
  • several slices Cotija cheese (Mexican cheese), about  1/4” or 1/2 cm thick  – 1 slice per watermelon square
  • balsamic vinegar
  • honey
  • mint leaves, some chopped, some whole
  • culinary lavender


Place the watermelon squares on a plate. 

Heat some olive oil in a frying pan.  Add the cheese slices and fry on both sides until golden brown, soft and maybe even melted.  Place the cheese on top of the watermelon.

Pour half a teaspoon of balsamic vinegar onto each watermelon cheese stack.  Then drizzle about one teaspoon of honey over it.

Garnish with the chopped and whole mint leaves.  Sprinkle some lavender on top.

Serve immediately!

    This looks great. Watermelon is my favourite fruit and I can’t wait to try this and the other watermelon recipes out!
