This is one of my favorite egg dishes. It has a sweet and sour taste mixed with curry… delicious…
- small piece of butter
- 1 large onion, chopped
- 1 tbsp curry
- 2 tbsp flour
- 1 tbsp sugar
- 1 to 1 1/2 tbsp apple cider vinegar
- salt, pepper, to taste
- 1 1/3 cups water + 2 tbsp
- 6 hard-boiled eggs, shelled and halved
In a pan, saute the onions in some butter until they are soft and somewhat translucent. Remove from heat.
In a bowl, mix the curry, flour, salt, pepper and sugar with the vinegar and two tablespoons of water.
Add the curry paste to the onions and stir. Slowly add the water while continuously stirring.
Turn on the heat again and let the mixture simmer for about 10 minutes. Season to taste with salt, pepper, sugar, or vinegar if necessary.
Place the egg halves on a platter and pour the onion curry over them.
